Maître d’ of The French Laundry, Nadeau will join esteemed pastry chef Claire Clark, for HospitalityNZ at Auckland’s ASB Showground’s, Greenlane, August 23-25.
Nadeau has worked alongside Thomas Keller at The French Laundry for 15 years helping to set the impeccable standards the restaurant is recognised for. He will share his expertise and some of the secrets behind his success with those lucky enough to attend the Telecom Masterclasses for which there are limited public tickets.
Claire Clark, can also be seen at Masterclasses and in addition will create her renowned desserts at the glamorous, annual ‘Feast by Famous Chefs’ awards evening. Entrees for the ‘Feast’ will be provided by Geoff Scott, and Giann Ordonio while Chef of the Year, Ken O’Connell is set to create the main dish making it a ‘must attend’ event for food lovers.
Tickets for ‘Feast by Famous Chefs’ are available from the Restaurant Association of New Zealand at $180 pp including GST.
This year HospitalityNZ features a new event, the ‘Fish and Game Kitchen’ promoting the adventurous use of game and game birds in restaurants. Professionals will demonstrate how to cook birds such as pheasant, duck and even pukeko and show how to produce the best from gaming meats.

• Coffee & Beverage deals with packaging to training – trade only.
